No carb or low carb bread is bread that is low in carbohydrates. Boom!
But really, what is it and how do you get it. We all know that the move towards low carb eating often means we have to miss out on some of our favourite meals including toast in the morning and sandwiches. No carb bread or low carb bread means you can now enjoy your favourite meals without missing out again.
Why is bread high in carbs?
Lets look at a typical loaf of bread, the ingredients that you will find and why it is high in carbohydrates.
A typical loaf of high carb bread from the supermarket with around 31 g of carbs per serve has the following ingredients:
Wheat Flour, Water, Maize Starch, Baker’s Yeast, Soy Fibre, Wheat Gluten, Vinegar, Iodised Salt, Vegetable Gum (412), Soy Flour, Canola Oil, Emulsifiers (481, 472e, 471), Vitamins (Thiamin, Folate, Vitamin E, Niacin, Vitamin B6), Minerals (Iron, Zinc).
Lets look at some of the ingredients in a typical loaf of bread and what percentage of carbs they have in them.
Wheat Flour – made from grinding wheat, it is the most popular form of flour that you find in bread. High in gluten, the protein that gives bread its shape and elasticity, wheat flour is also very high in carbohydrates. Wheat flour on average is 73% carbs.
Maize starch – the starch derived from the corn grain is often used as a thickening agent and binder in the baking process. Maize starch is on average 91% carbs.
Soy flour is another flour often found in supermarket bread. Made from grinding soybeans, soy flour is on average 30% carbs.
How can bread have no carbs or be low carb?
Lets look at no carb bread, the ingredients that you find in them and why they are low in carbohydrates.
A loaf of no carb, or low carb bread such as Protein Bread has only 1.5 grams of carbs per serve with the following ingredients:
Water, egg white, lupin flour, whey protein, golden flax meal, pea protein, almond meal, baking powder (gluten free), linseeds, chia seeds, cinnamon, iodised salt, sunflower seeds, poppy seeds and pepitas
Lets look at some of the ingredients in Protein Bread and what percentage of carbs they have in them.
Whey Protein – made as a by-product from the cheesemaking process, whey protein has only 6% carbs and is a high protein ingredient with 80% protein content.
Lupin flour – made from grinding the lupin bean, lupin flour is low in carbs with less than 10% carbs. It is low in carbs because unlike other beans, it does not have starch in them. Lupin flour is also high in protein and dietary fibre.
Golden flaxmeal – made from grinding flaxseeds into a meal, golden flaxmeal is low in carbs with only 2% carbs and has many other amazing nutritional properties including being high in protein and good omega 3 fats.
The quality of the ingredients is what sets no carb or low carb bread apart. Generally no carb or low carb breads are higher in proteins, dietary fibre or good fats which means that they can be low carb.
And yes, it does taste like bread!
