Instructions

You’ll need:

  • 1 1/2 Cups of milk (375ml)
  • 3 whole extra large eggs or 150g egg whites
  • 1 large apple finely diced (180g)
  • 1 heaped cup of blueberries (220g)
  • 1 packet of Protein Muffin Mix

Prepare
Set your oven to 170°C and preheat for 20 minutes. Use a silicon muffin tray, or line withCafe style muffin  wrappers.

Step 1: Mix
Empty this packet into a large mixing bowl and make a well in the centre. In another bowl, whisk together the eggs milk and diced apple. Pour the egg mixture into the dry mix and gently fold together to combine. Add the blueberries and gently fold through once more.

Step 2: Portion
Spoon the mixture into the muffin tin and decorate with a few extra blueberries or chocolate pieces on top.

Step 3: Bake
Place on top shelf of your preheated oven, bake for 30-35 minutes. Rotate the tray halfway to ensure even baking. After baking, remove tray from oven and place muffins on cooling rack.

Storing your Protein Muffins
Muffins must be stored in the fridge (for up to 5 days) or the freezer in sandwich bags (for up to 3 mths)
