BBQ Meat Lover Protein Muffins

When you want all the flavours of your favourite Pizza, without the carbs. These BBQ Meat Lover Protein Muffins have just under 30g of protein per muffin and only 3.6g of carbs.

  • Cook: 40 mins
  • Yields: 10 BIG Muffins


1 packet of Savoury Muffin Mix

150g egg white or 3 eggs

315ml water (1 1/4 cup)

100g diced bacon, cooked and chopped

100g chopped BBQ chicken

100g sliced pepperoni

250g Pizza blend cheese

3TB Pizza sauce (I used Leggo's squeeze sauce)

1/3 cup Sugar Free BBQ Sauce


1Preheat a fan forced oven to 170°C and place 10 cafe-style muffin wrappers in a muffin tray (or use a silicone tray).

2Empty contents of this pack into a large bowl. In a separate bowl, whisk together water, eggs

3Add diced bacon, chicken, cheese and pepperoni to the mix (optional-leave a little to garnish)

4Swirl through the Pizza sauce 1/3 cup BBQ sauce

5Portion out in 10 muffin cases and top with the additional cheese, BBQ sauce and any leftover meat

6Bake at 170 degrees for 40 mins or until the skewer pulls out clean

7Allow to cool slightly before removing from tin to cool on rack.
