These Funky Monkey Banana Choc Chip Protein Muffins were inspired by @jacintagrimaldi 's delicious muffins we re-shared last week!!! They looked so damn good I knew I had to give it a go myself! Each one of these delicious muffins has ✅ 12g Protein, ✅ 12g Fat and ✅ 13g Carbs – higher carb than I'd usually go for, but they are banana and chocolate after all! So moorish. Luke
1 packet (340g) of Protein Muffin Mix
1Preheat a fan forced oven to 180°C and place 12 cafe-style muffin wrappers in a muffin tray
2Empty the packet of Protein Muffin Mix into a large bowl
3In a separate bowl, whisk together milk and eggs. Pour this wet mix into the dry muffin mix and gently fold until just combined, then add the choc chips and banana and fold through once more
4Using a spoon, portion mix into the 12 muffin wrappers. Decorate with a few extra choc chips if desired.
5Place on the top shelf of your preheated oven, and bake for 20-25 minutes or until golden brown. Rotate tray at halfway to ensure even baking. After baking remove tray from oven and place muffins on a cooling rack.
6Storage - Muffins must be stored in the fridge (for up to 5 days) or the freezer in sandwich bags (for up to 3 months)
