High Protein Lemon Chia French Toast with Raspberry Sauce

This recipe submitted by Protein Bread Co Customer Jade Rogulj tastes just like a cherry ripe - but high in protein and low in carbs and sugar.

  • Yields: 2 servings

Ingredients

4 Slices of Protein Bread

2 Eggs

1 tablespoon of pre-soaked Chia or Poppy Seeds

1 Lemon

50g frozen Raspberries

1 teaspoon of Natvia Sweetener

50g Coconut Flakes

Desiccated Coconut

Directions

Raspberry Sauce

1In a saucepan, heat together the frozen raspberries, the juice of half a lemon and the teaspoon of natvia until warm and pulpy

Prepare Toast

1In a bowl, mix together the eggs, pre-soaked chia or poppy seeds and the zest of 1 lemon.

2Let the Protein Bread soak in the wet mix for a few minutes.

Cook

1In a medium pan, lightly fly the 4 slices of bread until golden brown.

2Top 1 slice of protein bread with the raspberry sauce, coconut flakes, desiccated coconut and repeat for the other 3 slices until you have a stack of french toast.

3Garnish with a sprinkle of leftover chia or poppy seeds

4Enjoy!
