150g Dark Chocolate (we used Lindt 90%)
1 1/4 Cup (125g) Shredded Coconut
1Place dark chocolate in a medium, heat proof, microwave-safe bowl. Microwave, uncovered, stirring with a metal spoon every minute until almost melted. Ensure to stir until smooth.
2Stir through coconut until coated in chocolate.
3Line a baking tray with baking paper and spoon chocolate/coconut mixture into 12 even portions, Refrigerate for 2 hours or until firm. (Nest can be made upto three days ahead, store in airtight container in the refrigerator)
4Enjoy as a snack on the go or even add your favourite low carb ice- cream some fresh berries and make a great tasting dessert.
