Whenever I am unsure of what to have for dinner, chicken is that one staple that pops into my head as a default. There is so much that you can do with chicken, I would even go as far as saying it is the most versatile meat out there. Saying that, sometimes it is hard to think of what to do with it and how to cook it differently (instead of resorting back to that safe and maybe boring recipe that that we always make). Here are some low carb chicken recipes to inspire you….

Chicken Courgetti with Tomato Sauce

Courgetti (also known as ‘Zoodles’) in a home-made tomato sauce with chicken is such a comforting dish, especially in the winter that never gets boring. Cook a simple tomato sauce using chopped tomatoes (tip: look out for tinned tomatoes with a low sugar count, I normally look for anything with under 4g) pan fried diced onion, Italian herbs, garlic, and chilli if you like a bit of spice. Prepare the chicken in the oven with Italian herbs, or pan fry in pieces with seasoning. Courgetti is easier than you may think too: use a spiralizer/julienne peeler or potato peeler to get long thing strips of zucchini, then pan fried for about 3 minutes until slightly soft. Combine cooked chicken and tomato sauce and pour on top of your courgette. Add some grated cheese if you fancy too.

Low Carb BBQ Chicken Protein Pizza

This is an absolutely favourite of mine that I often have on a Friday night. Create a Protein Pizza Base and once topped with your tomato paste, add cheese, chicken, shallots, onion, mushrooms, feta, mozzarella and no added sugar BBQ sauce to create the ultimate low carb pizza feast. Chicken Curry with  Low Carb Garlic Bread 

I love curries, they are spicy and warming and incredibly versatile and don’t always need to be heavy and unhealthy. Create a healthy chicken curry using the Hairy Dieters recipe. I have to say, this recipe is one of my favourites (although I do miss out the 1tsp of Sugar). Serve with cauliflower rice or low carb garlic bread.

Mexican Chicken with Lettuce Boats

I love Mexican flavours, so to add Mexican chicken onto this list into lettuce boats was a must for me. I love making fajitas but I make them without the wraps, and I line large lettuce leaves with my sour cream and salsa base instead. The bigger the lettuce leaves the better!

Chicken Mince Bolognese with Courgetti

I recently discovered chicken mince and it has now become a regular on our household shopping list. I love to create a bolognese style sauce from chopped tomatoes, garlic, herbs and spices with diced onion and red pepper and using chicken mince instead of beef mince. The chicken mince has a firmer consistency, but really absorbs the flavours from the sauce. Serve over courgetti for a low carb twist.

Chicken Skewers in a Yoghurt and Paprika Dressing

Whether you’re going to cook on the BBQ or in the oven, chicken skewers are an easy way to cook chicken. Cut chicken into cubes, also peppers/ halloumi /onion and load onto either wooden or metal skewers. Create an easy marinade by combining Greek yoghurt with paprika and lemon and lather over the chicken. They only take about 15 minutes in the oven or on the BBQ and can be combined with any kind of salad for a tasty meal.

Chicken Parmigiana Sandwich

Chicken Parmigiana doesn’t have to be a treat, and can be served in a low carb format when eaten on top of Protein Bread Co.’s low carb bread. I like to serve mine with a side salad too. You can find the full recipe here
